Imperial Red IPA
« on: August 17, 2015, 07:13:30 pm »
Hello all,

I recently joined the AHA and this is my first post here.  I want to make an Imperial Red IPA.  I am going for a somewhat malty flavor but not malt-forward.  I'm wondering if it's better to cut my Pale 2-row base malt with a good amount of Vienna to up the malt flavor, stick with 2-row as my sole base malt and add a little Munich or maybe go 50/50 with Maris Otter.   I'm leaning towards Vienna as it's 'Rich malty flavor,
hint of biscuit and clean finish' sounds more appealing than Munich's 'Clean, slightly sweet, rich malty' characteristics.

The hops I chose were picked mostly for their Grass, Fruit and Earth flavor/aroma.   I want the flavor and aromas of these hops to be well noticeable but not in-your-face so I wondering if I need to up their usage and maybe add a whirlpool addition.

I am open to all suggested changes for both malt and hops but the yeast is set in stone (already on the stir plate).  Thanks!!!!

Howdy and welcome.

That looks like a lot of C60. I'd go with zero and get my color from a little midnight wheat.

Or replace the pale malt with Red X and drop the other malts entirely.

I LOVE Evil Twin. Lots of hop flavor, all late hopping, great red color, great malty tones from the Maris Otter. You can find it in this article:

Lots of folks here told me how much they like it as well when I had questions before brewing it. It was one of my favorite brews I've made.

Thanks for your reply.  I got it looking like this.  beersmith doesn't have midnight (but my LHBS does) and this black malt looks similar enough to use as a place holder.

11 lbs   Pale Malt (2 Row) US (2.0 SRM)   59.1 %
7 lbs   Vienna Malt (Briess) (3.5 SRM)   37.6 %
7.2 oz   Caraaroma (130.0 SRM)   2.4 %
2.7 oz   De-Bittered Black Malt (Dingemans) (550.0 SRM)   0.9 %

I needed to up the malt to add to the ABV (currently sitting at 8.6% with this bill) but it brought my gravity to 1.091 which seems really high for 8.6%

The Homebrew version of evil twin is a very solid recipe. If somebody were to post it as is today it would get a bunch of "too much crystal" and "not enough late hops."
