Old Chico clone recipe help
« on: July 31, 2015, 07:26:13 pm »
Hi all,

New here, and fairly new to all-grain brewing.

I was recently able to try a Serra Nevada Old Chico Crystal Wheat (oddly, found in a supermarket in Hong Kong) and would love more of it.  Can't find it near me in Australia, so wanted to see if I could make something similar.

From the SN website and reviews, makeup is:
65% wheat malt, 35% 2-row pale barley.  Perle bittering hops and Crystal finishing, ale yeast.  4.8% alc/vol, IBU of 26.  OG 12.0 plato, FG 2.7 plato

So here's my recipe - I inputted into BrewMate, and it seems close:
For 6gal batch:
Wheat Malt, 7.385lb (65.05%)
American 2-row. 3.968lb (34.95%)

Perle hops, 1.234oz @ 60mins
Crystal hops, .423oz @ 0mins

Wyeast 1056 (American Ale)
Mash @ 151 deg F for 60mins, boil 60mins, ferment @ 63F

This gave me an OG of 1.049 and FG of 1.012 for 4.81% ABV and an IBU of 26.1

Had one bit of feedback that it looks good, but keen to know if anyone here who's made it (or similar) or had more than a couple of bottles had any input or thoughts on tweaking what I've come up with?  I messed around with the hop amounts to get the IBU close, and have just done a simple boil, but open to ideas.

Thanks in advance for any insights!

Even if it doesn't "clone" Old Chico it should be good. You might want to include some rice hulls with that large of a percentage of wheat.
