Update on AHA recipe Dogfish Head Raison d’Etre Clone
« on: September 13, 2015, 10:03:40 am »
My first run with this recipe would like to say that I love raisins in beer. Based from the posted recipe from AHA in which from the get go was not sure of the numbers given where possible for the average home brewer so I went at it and performed my brew day as normal and paying attention to details. Very good day I must say all went well hit the numbers I hoped for, actually Better. I use a gravity system with a 17 gallon rectangle cooler batch sparge 2 steps and slow usually 1.5hr, boil in converted keg, These are my results.

Water:Poland Spring no adj.
Mash in:152 60 min
pre boil gravity:1.056
pre boil volume:6.8 gallons
Boil: 1 hr
chill and check gravity: O.G.-1.072 nice
mash eff.:77.5% very nice pays to sparge slow!!!!
Great color and smell 5.5 gallons in fermenter will update progress.
Update after 2wks in primary and 2wks in secondary final gravity at 1.006 rather drier than anticipated but nice smell and color taste bit dry, hard to say pre-carbonation overall happy.
