I recently did a side by side with wine yeast (kiv1118) and us05. I set up a triangle for my girlfriend who didn't know what we were looking for and I had her set one up for me. We both came to the same conclusion: the us05 had noticeably more body and was slightly less tart. The uso5 FG was only a half point higher.
Don't let the bastards cheer you up.

Usually us-05 or Windsor. Windsor leaves it a bit sweeter. I like bottled cider on the dry side but have been known to back-sweeten in the keg if it's being chilled. Otherwise I don't mess too much with my ciders.
