That's pretty close to what I do, other than the Mandarina (which will be good).

Yes, I'm a bit snobbish, and well past the point of apologising for it.
I am, however, always willing to readjust my own preconceptions.

I'll know more about Helles and other German lagers by the end of february, and I'll be sure to report back here.

In the meantime, I'm looking forward to tasting that Mandarina brew.

For the Dortmunder I am going to brew I read in Beersmith: "Minerally water with high levels of sulfates, carbonates and chlorides". Any suggestions as to ppm?

I am happy to say that my Dortmunder with Mandarina Bavaria came out very well. It was highly appreciated during a tasting session at the local club. When people start asking for more after the official end of the meeting, I think that's a good sign.

For myself, being a lager hater, I think I successfully managed to mask most of the lager taste, so I kind of liked it.

Thanks everybody for the good advice on lagers, Dortmunders, MB, water treatment, forced lager fermentation and carbonation methods, etc. etc.
