I love Caravienne malt. I'm not familar with Carared or other brands version of Caravienne. I needed .75 lb of Caravienne in a recipe once and the LHBS was out so I subbed .5 lb of C-20 and a .25 lb of Honey malt. To me Caravienne isn't just some C-20, it has a slight toasty sweetness, which is where I thought the Honey malt might come in to play well. It worked out ok. It would be like trying to sub Crystal for Caramunich, that is another rather unique malt.
