Hybrid ale yeast.

I'm thinking about combining grains from two kits to make a red ale /honey grapefruit ale. Any ideas on where I should start with yeast?

1056/001/S05 is neutral and easy to use. Hard to go wrong there.

Not sure how how the honey would play with the grapefruit but give it a whirl!
