I bought some Weyermann Bohemian dark tonight, between 5-8L. I was planning a classic Czech Pilsner. Do you think the dark will be too over the top or make a nice slightly out of style Czech pils.

going to be very bock like or rich festbeer vs pilsner. not that that's bad, just isn't going to resemble a czech pils per se.

If I am drinking it, only depends on 2 things.... Is it cold, Is it alcoholic?  But most likely couldn't refer to it as a Classic Czech Pils

I think you're all right. I'm gonna go back and get the weyermann bohemian floor malted pils. I'm thinking I can brew the Czech pils and then repitch into a bock or maybe a Schwarzbier.

I would say set up the mash profile so it ferments nice and dry. That way you won't have a sweet bock-like finish, but the richness of the malt. Could be really nice, yeah.

I'm on a similar course for my next brew.  But shooting for more of a Czech Amber.  60% Bo Pils malt, 35% Bohemian dark malt, and some Carabohemian.  The SRM is looking like around 8.5, so even with that grain bill, too dark for a Pilsner.
