Dave, if I understood correctly, you used diferent recipes for each batch?

No sir.  Same recipe, different efficiencies, different mash processes.  I used all the same malt percentages for each batch, just different masses based on the efficiencies and processes used in an attempt to hit the same OG for each.  Got 1.049 and 1.054, 81% and 64% efficiency.  Not too shabby I thought.  It's like a quadrupel variable experiment, so some might be skeptical as to applicability of results, but hey, it's my experiment.  :)

The modern breweries I toured in Germany had water that had been column stripped of O2, and they did step mashes. Ayinger had about a 4 hour step profile.

I care about step...positive difference for me and my lagers. haven't taken any different steps to minimize O2 - need to catch up on everyone's posts and see if the hassle is worth it for me.

If you wait a bit, there will be some results coming. Lots of people in the midst of experimenting. Some with brewtan and others with LODO.

If you're happy with your beers now, there really isn't a need to change your process. For me, I've been pretty unhappy with many of my German beers, so I'm experimenting with low DO (can't bring myself to type LODO, just doesn't feel right).
