 I have a RIMS right now running a electric water heater element in a section of 1.5" copper pipe, but my HLT and BK are propane.
I got a deal on a Hop Rocket and am looking to purchase a RIMS Rocket for it but dont know whether to get the 120V or the 240. Since I might replace the propane kettles with induction, are those 240V as well? your thoughts.

Going with 240v enables you to deliver much higher wattage to your wort and I find that having extra wattage helps when you are ramping temperatures to higher steps or bringing wort to a boil. You probably won't need those excess watts all the time, but they are handy at times.

Do my pumps need to remain on a separate 110 circuit? And if/when I go electric BK and HLT can they all go on the same 30 Amp circuit?
Full disclosure here: I'll be getting my electrician buddy to wire this up so I dont kill myself; just trying to get a rough idea.

No. You can run 110v off either hot leg and the neutral wire. The voltage for hot leg to hot leg is 240v and the voltage for hot leg to neutral is 120v. My entire panel with its 240v and 120v circuits is run off a single 240v, 50a supply.

Be sure to use a neutral and not the ground when drawing 120V from a 240V line. Some 240V lines don't carry a neutral. I plug my 3500W / 240V induction hob into a 20 amp air conditioner outlet that doesn't have a neutral. I use a separate 120V outlet for my pump.
