My wife & I are traveling to Chicago this weekend. Are there any breweries / brewpubs that you would recommend? Goose Island is close to where we are staying so we'll probably check that out. Any other good ones to check out?

Yes, Haymarket too.

Here's a pro-tip. Go to Au Cheval and put your name in for a table. Next walk across the street and drink at Haymarket for an hour or so (will probably be a long wait at Au Cheval). When Au Cheval calls you/texts you for your table walk back across the street and order the cheeseburger with bacon and an egg. You won't regret it. If you don't think a cheeseburger is worth that wait just google or GIS "Au Cheval cheeseburger"

Dry hop brewery has some nice ones.
The wife and I went to a Cubs game a couple years a go and went walking around before hand.  We found this small joint.  The wheat IPA was really good.

I'll add Hopleaf to your list. Not a brewpub, but a great selection of Belgian and American beers.

The Binny's across the street from the Goose Island brewpub is probably the best bottle shop in the city. And they have a taproom.
