My third attempt with this recipe. The first attempt came out great. We tried it side by side with some Pliny fresh from the brewery and we were split on which we preferred. It came down to hop preference, i.e. those who prefer Mosaic and those who prefer Simcoe.

It's very close to a final recipe but I thought it needed less sweetness and more resin/dank character.

Main tweaks -
Replaced 8 oz of Carastan with 8 oz carapils. The Beer had a bit too much sweetness last time.
Adding all dry hops in at once for 3 days vs. splitting the dry-hops in half and doing 7 days and 4 days. Wanting a bit more resin out of it and thought I'd see if I get similar results as Marshall's short vs long dry-hop xBmt.

Mash:148 Batch Sparge
The Yeast Bay Vermont Ale Yeast 3 days at 68, 72 for 11 days (or until done), then cold crash and add .5 tsp gelatin for 2 days before transferring to keg.

Expected O.G.: 1.082
Estimated IBU (beersmith): 106

Pale and dry, low mash temp. I don't make as many IIPAs nowadays, but it looks pretty similar to mine. I like those hops together, too. Looks great !
