Stout Hearts

I'm making a fancy and original (no recipes, all made up myself) dinner for my Valentine. Of special interest on the forum are these chocolate stout hearts. She loves stout so I made homemade chocolate with raw cacao paste, dme, and a powder of ground TF pale chocolate malt, roasted barley, and black patent malt.

The chocolates will be served with a cherry creme brulee with a hint of rosewater. Also on the menu: ravioli stuffed with lobster,white miso butter, gruyere and parmesan with a lobster infused coconut milk cream sauce with saffron and champagne and sauted duck breast with an ume plum glaze and pickled s***akes deep fried in duck fat served over spicy braised greens and pureed roasted cauliflower and leeks. She's making a fancy pre dinner cocktail.
