I woke up under the weather and don't feel like brewing, but I had a starter on my stir plate that I prepared last night. Can I toss it in the fridge and use it later? How long will it last of that is possible?

You absolutely can. The sooner you use it the better, but you're probably good for 1-2 weeks without a problem.
