If you choose not to rehydrate, at what temperature do you pitch.  For 05, the fermentis says pitch at 68 degrees or higher.  Any thoughts then about fermentation temp?   Many people seem to advocate pitching cooler for liquid yeast or a starter and then ramp the temp.

i still pitch lower temps (mostly low 60'sF) for most with dry yeast -rehdryated or not. US-05 works very well on the lower temp end. higher temps starting out and IME you get more of the esters related to that particular yeast strain....sometimes that may be what you may desire so proceed accordingly.

63F...sometimes as low as 57F.
Life begins at 60.....1.060, that is!
