Banditbrewers what should i brew next!!!!

Hey hope everyone is doing good. I work for a brewery in Alabama our state is only 5 years legal. which means that i get to learn more and more from you all. I am assistant brewer at the brewery and love it im actually getting on here to get some feedback, questions answered, suggestions what ever it takes. Hard work is key but quality in the details is the number one rule. my goals out of this forum is to learn so much i cant handle it and to make a beer that people dont want to put down. My boss has been brewing for 15+ years and me being 23 i want to be better than him and surpass him so first question. What should i brew this weekend we specialize in Belgian and German beers. My favorite styles are quad tripel dubbel doppelbock bock and starting to get alittle bit more into ipa Thanks so much for reading if you did first person to respond ill send some swag to the brewery i work at Thanks

Welcome to the forum. Lots of great information here. As far as what to brew, I would say something light and easier to drink since it's getting warmer. Maybe a Belgian Wit or a German Hefe. Both are easy to drink and will be attractive even to BMC drinkers. A lot of people around my city have gotten into craft beer because of some popular wits and Hefes.

If you currently have lager yeast available and ability to control fermentation temps, then I would probably be brewing some average gravity german lagers (helles, dunkel, vienna, export/dortmunder, pilsner, etc). If done right, you really can't go wrong with those and your customers will drink the crap out of them. More so, then a doppelbock or Belgian Quad.
