Chocolate Irish Stout
« on: February 27, 2016, 01:34:52 pm »
Hi everyone! I just brewed an Irish Stout and added 4 Oz of unsweetened cocoa powder (I want the chocolate flavor but don't want it to be overpowering).

I'm planning to add lactose at bottling to actually sweet the cocoa into chocolate... how much lactose will suffice for a 5 gallons batch? 1 lb? 0.5 lb?

Your thoughts and expertise are more than welcome!

In this case, since you have already added some cocoa, I would suggest that .5 # would be sufficient for what you are looking for.

Just for some comparison, a classic milk stout typically has around 1# of lactose added to the boil. So, half of that sounds about right for your brew.
