7.5gal to the fermentor

15 lb - Maris Otter Pale
2.5 lb - Crystal 40L
1.0 lb - Patagonia Black Pearl
2.0 lb - Midnight Wheat
4.0 oz -Roasted Barley
0.5 lb - Flaked Barley
0.5 lb - Flaked Oats
1.0 lb - Fresh ground Coffee

2 oz Magnum
2 packs of Notty

Might even drop a pound of Lactose in, not sure yet.

Ferm 2:

On Deck: American Wheat

Keg 1: Un-Common

It's a big beer but not hugely so.  You might be fine with 2 packs of yeast.

If you add the lactose you should be expecting a pretty high FG as you already have quite a bit of unfermentables in there.  If you are going to add the lactose, maybe consider decreasing your crystal 40L by 1# and you midnight wheat by 1# too. Just a thought.

With that OG, your two packs will suffice and I bet you could even get away with 1 pack too.
