I skimmed a few batches, didn't notice a difference in the end. Haven't done it in a while.

If I was working to perfect a recipe, I'd try brewing it both ways and see which method works best. Meanwhile, I'm still brewing so many different beers that I just don't see it being worth my time.
Corn is a fine adjunct in beer.

And don't buy stale beer.

One thing it helps is prevention of boil overs at the beginning of the boil. If using a kettle at capacity, it helps to get rid of the sticky stuff.
This is the one reason I do it, when I remember to or feel like it. Otherwise, I don't think it makes a difference either. Now skimming the top of the fermenter, I do feel makes a difference. That braunhefe is REALLY bitter stuff. Perhaps it only makes the beer taste smoother sooner, but I feel it makes for a more pleasant and rounder flavor also.
