Pale ale recipe idea
« on: May 03, 2016, 05:38:08 am »
Hi, I am looking for some general feedback on the recipe below.  I am going for a hoppy pale ale style, inspired from JAWN by Neshaminy creek.  For dry hopping I am planning to use 2oz of nugget and 2oz zythos in each 5 gal keg.  Also for water adjustments, should I treat like an IPA and go 300ppm sulfate ?  Or would you recommend lower sulfate levels?  Thanks!

Looks good... I might shorten my dry hop time and trim the sulfates back some. You're pushing IPA with hops rates, less sulfates/chloride might even you the malt balance a little.

+1 to keeping the sulfate in check. At 300ppm many people experience a "minerally" flavor to their beer beyond giving more bittering perception as sulfate does at lower levels. While it's a matter of taste, it can be off-putting to some.

If you made an IPA at 200ppm and liked what you got out of it, I'd say maybe knock it back to 150 for the APA and see what that does for you. If you want more balance, consider close to same concentration of chloride:sulfate.

I've actually never used nugget as a flavor/aroma hop. I'm interested in how that works out. FWIW, I've cut my sulfates back to 125-150ish in my APAs and IPAs. Also, I know you said 2 oz of each to dry hop, but in your recipe, you have 4 oz each.

Thanks for the advice!  I think I will scale back to 150 for sulfate and probably have less chloride than that to slightly emphasize the hops over the malt.  I have my dry hops listed like that just to remind me how much to buy.  I am going to put 2oz of both nugget and zythos in each of the 2 kegs.  So its a total 4oz of each kind of hop.  Sorry about that.
