These look good.  I will make some tonight.  I think I'll use queso blanco though or maybe some with that and some with cheddar.

How was it? I keep wanting to go there, but never seem to make it. They have some hiking trails leaving from the place I'd like to check out as well.

The beers were nothing great but very drinkable, and what is it with you Belgians... you see a muddy trail going up a mountian and you just have to hike it :D

Ahh another nice sunny day in Bouillon...

Crazy, huh? 3.8 pounds of ANY green plant material is a freakin' lot. I've been putting the things in everything and just made a big pot of green chili and there's barely a dent.

Didn't somebody already call these "artery poppers"?  Battered and fried takes that to a whole new level!
Last year I made some stuffed with homemade sausage leftover from making 100 pounds of bratwurst.  We made about 50 from very fresh jalapenos, wrapped in bacon and smoked over mesquite for about 2 hours.  Probably wasn't very healthy, but then our Oktoberfest isn't a very healthy weekend to begin with.
I'd really just rather be brewing in sunny Carlsbad New Mexico
