We make mashed potatoes with roasted garlic and onion sometimes. Just throw an onion and head of garlic in the oven till all roastylicious and then squeeze them out of their skins into the mash. Man are they good. I mostly like my mashed unfettered but the roasted one is my wife's fav. so we make that a lot.

Im gonna call my version GOIMP.

Corned Beef & Hash with a couple of sunny side up fried eggs on top.  That's a Breakfast!!!! MMM, MMM, MMMMMM! ;D

Use the cabbage, carrots, everything.
I saute up a fresh onion, maybe a little garlic then add the cabbage and let it get wilted again.
Everything else in the pool and then its into a 375 degree oven until its all yummy, time will vary according to what your thoughts on yummy are :D

Over easy eggs and a splash of Jalapeno hot sauce

I might have it for dinner tonight  ;D , theres still some left

Ran into one of the pre-cured corned beef the other day at the store. It must have been a left over from St. patties day cause it was reduced in price from $10.50 to $3.00 We made the corn beef and cabbage the other night. eh. But today made the corn beef hash like babalu recommended only did it on the stove top.

Delicious! sunny side eggs on top was wonderful.

I chopped the corned beef in the food processed to small pieces before adding it to the pan with the potatoes.

Took a little of that chopped meat and added some mayonnaise, chopped onion, celery, paprika and a pinch of mustard. Mixed it into  corned beef salad for sandwiches. It is very good.

Ever heard the dish of corned beef and cabbage refereed to as "New England Boiled Dinner" ?

It was indeed a good diner. I like the hash much better than the boiled dinner.

Made a bunch of corned beef salad club sandwiches for everyone at work today. They went nuts for them. They would be much better if the toast was right out of the toaster, instead of sitting in a cooler all morning. And better if they were with a beer instead of water.

 Is corned beef salad already invented?  really good anyways, kinda like home made deviled ham.

Smoked a beef bricuit today. Not quite corned beef but finger lickin' good. Homeade BBQ sauce on top!
