I just pulled a sample of this. Visible signs of fermentation stopped after 3 days, and has been in the fermenter for 7 days now. SG is at 1.012 for 5.0% ABV. It has a good pale color, and is fairly clear at this point. Aroma wise, it smells like beer, with nothing really notable about it...just smells like beer. The flavor is pretty much the same. The bitterness is well balanced, and it has no real sweetness to it, nor is it overly dry either. I kind of pick up on just a very slight hint of spiciness, and no off flavors at all that I can detect, even though during the most active fermentation, it did get to 80F. I am guessing that when I dry hop with the Saphir in a few days, it will add a bit more flavor an aroma to liven things up a bit. At this point, it just seems to be a decent, well rounded, easy drinking beer. At $7 for the yeast and hops, I think it was a good deal for a 5 gal batch. Planning to let it sit a few more days, then dry hop, and bottle next weekend. Once it's carbed and ready to drink, I will update with the final result.
