Fall Fest Ale

Starting point for a OFest/Marzen inspired Fall Fest-ish-val Ale

Original Gravity: 1.057
Final Gravity: 1.017
ABV (standard): 5.21%
IBU (tinseth): 20.98
SRM (morey): 7.69

FERMENTABLES:
8 lb - American - Pilsner (42.1%)
5 lb - German - Munich Light (26.3%)
5 lb - German - Vienna (26.3%)
1 lb - Belgian - Biscuit (5.3%)

HOPS:
2 oz - Saaz, Type: Pellet, AA: 3.4, Use: Boil for 60 min, IBU: 16.81
1 oz - Saaz, Type: Pellet, AA: 3.4, Use: Boil for 15 min, IBU: 4.17

MASH GUIDELINES:
1) Temperature, Temp: 150 F, Time: 60 min

YEAST:
White Labs - San Francisco Lager Yeast WLP810

I like it-  That will be very nice and drinkable.  The hop flavor and biscuit will add depth to the flavor profile in addition to the toast.  Nice.
The steam yeast is a good choice, too.

I like it a lot as well. Maybe bump up the IBUs a tad?
On Tap/Bottled: IPL, Adjunct Vienna, Golden Stout, Honey Lager
Fermenting: IPA
Up Next: mexi lager, Germerican pale ale

The Saaz, is all I have on hand, I have thought about adding an IBU or 2, if the store has Saaz then maybe....

Saaz is great but it plays very nicely with the other Noble and the Noble-type varietals.
I'd check out Tettnang or Hallertaur if you can't get Saaz.  Or go a little spicier and use some Spalt.  The American Noble "children" will go great here too.  Crystal, Liberty, Mt. Hood, Sterling.  You have a lot of options and all of them are excellent.

picked up another ounce of Saaz, fresh too, they just got them in 2 days ago.

If they did't have Saaz I would have used Sterling (I use them in my Irish Red)

I agree with Steve regarding IBU's. If it were me,  I would bump up the hops to around 25 IBU's to help enhance that hop crispness and keep the drinkability up. It will also help to combat that malty goodness you've got in there.
