Haha I want to see if the 3rd beer can be a Brown or a mild, based on gravity

Toss in a bit of lactose and make a breakfast milk porter/stout with the 3rd runnings.
Risk of failure should be no deterrent to trying.

So the 3rd we may thrown in some more oats for a mild.  We will see, if the 1st 14 gallon batch split into different kettles 1-5 gal porter 1-5 gal double milk stout, then depending on gravity, 3 - 3-4ish gallon Brown or mild

So I guess you could say it is really going to be a 1st and 2nd running beer... but it should be good either way.  At least this time I have a brewer assistant.

What yeast(s) are you going to use?

Never used it before, so here is a test I guess.

I used it before a few times.  It always worked fine for my purposes, but it might be a bit high on attenuation for the low OG beer.

My only other options for ale is WLP004, but I will have to build a starter up, and 11 hrs is a short window for a starter even if at 1.045-50's

I would think that (assuming the yeast isn't old) you would be fine if you did 11hr of 1L starter.  You will have had most of the yeast growth by that point and it might still be at high krausen so you could just chuck the whole thing in while it is still awake and kicking (vitality starter style).

I would probably use the 004 on the "small" one (then repitch that cake next time around).  If it was something hoppy I would think to just dry it out with the nottingham but the mild/brown might end up thin.

It's only about 8ml cake in a 10ml vial from a older starter, so it's sitting at about 70-75% right now.  I would need to build it up slow at about 45ml, then 225ml, then to the 1.2L range for the batch...
