Chop & Brew's King Cake Ale (Video & Recipe)

Chop & Brew just posted our newest episode in which we devise a homebrew recipe in tribute of King Cake, one of the best foods from the Mardi Gras carnival season. In this case we didn't mash with actual cake, rather we worked with homebrew all-star Drew Beechum and Gulf Coast homebrewer (former pro brewer) Dan Murphy to come up with a beer that shares some of the characteristics of a King Cake.

Congrats on 50 episodes, Chip. I watched it last night and it's fun to see Don O. in there. I'd like to see more with Dawson and Keeler also!

I got into all grain by reading Denny Conn, Ken Swartz, and watching Don O.  NB Brewing TV and Chop & Brew videos came later for me. Thanks for the all information and Congrats on your 50th Chip!  I owe a lot of brewing know how to you and the gang ...and Roll Tide!

I'm new to homebrewing and considering a partial mash, and I was wanting to read Ken Swartz's paper referenced in these old posts, but it looks like his website is gone.  I was wondering if anyone had a link to his new website or the PDF paper in question.

I worked a bit with Ken back in those days and may still have those around.  But frankly, theuu were needlessly technical for such a simple topic.  I'm not in a position at the moment to give you a rundown, but if no one else does I can follow up in a couple days.
