Chop & Brew just posted our newest episode in which we devise a homebrew recipe in tribute of King Cake, one of the best foods from the Mardi Gras carnival season. In this case we didn't mash with actual cake, rather we worked with homebrew all-star Drew Beechum and Gulf Coast homebrewer (former pro brewer) Dan Murphy to come up with a beer that shares some of the characteristics of a King Cake.

I'm new to homebrewing and considering a partial mash, and I was wanting to read Ken Swartz's paper referenced in these old posts, but it looks like his website is gone.  I was wondering if anyone had a link to his new website or the PDF paper in question.

I worked a bit with Ken back in those days and may still have those around.  But frankly, theuu were needlessly technical for such a simple topic.  I'm not in a position at the moment to give you a rundown, but if no one else does I can follow up in a couple days.
