So no on the enhanced double decoction?  Only one way to find out I suppose.

I love decoctions, but if you are trying this one low oxygen its going to be out. I would hochkurz step it, but I am partial to that.

After many trials, I just don't see the advantage to decoction.  Whether or not to do it should be more up to what you feel like doing than anything else.

Ive been researching brewing a quad recently. While searching i bumped into this gem. It has good info "i think" and shows diffrent percentages of grain/sugar yeast, pitching temps and diffrent brasserie technique.

Stan goes into much more depth (most if not all of this PDF is from BLAM) in the full text.

Great book if you dig the monastic styles.

I looked the kunze book you pulled pH info from it was $2500 on amazon.
Maybe this one is cheaper.

It may not be BLAM but that's a pretty good resource to use.

I guess I need to get mine out. I didn't think it was pulled verbatim.

Kunze is about $250 the last time I checked. Well worth the money.

I don't think it's verbatim text passages but all the material, save maybe the graphs of yeast characteristics, is straight from BLAM in one form or another.

I can't remember the last time I spent that much on a car.

It's much less expensive than that! More like $250.
