Blue Corn

Hello,

I was interest in trying blue corn in a homebrew recipe. I was thinking of doing a Mexican lager and replacing the flaked corn with blue corn. Is there a way I could flake blue corn? I have read some suggestions about doing cereal mashing for blue corn .

Anyone have experience with blue corn?

I would just grind it up relatively fine and cereal mash it. Trying to flake corn yourself will be much more trouble than it's worth.

When we did the beer for that Brew Dog show I just cooked it in a crock pot and threw it in the mash.

I just realized something that you might be able answer, since I don't have access to fresh blue corn I was a little unsure what I could use. There is blue corn posole, just the dried corn not all the other stuff. Could I use that but re-hydrated? I have seen some blue corn flours or atole but those seem to have other things added to them.
