I just opened a very small brewery. Our first day we had 3 taps. A 3.8% session IPA a 3.8% saison and a 5% oatmeal stout. Since then I added a special bitter, IPA, stronger saison and dosed the stout with cold brew coffee. I have a Berliner Weisse on deck.

It's funny what is popular. Basically whatever is the new release and the IPA.

I am going to get in to some more experimental stuff in the near future adding in a small barrel project.

I am in a small town that is still moving in to a craft beer culture so I am hoping to educate along the way. That way I get to brew the beer I want to drink and sell it as well.

Best of luck to you Troy!  Are you brewing on premise or off?

There is a 1.5 bbl brewery on premise with a tap room attached. Luckily Washington State is pretty liberal in its regulation of microbreweries and allows retail sales out of the production brewery.

We are just a few weeks in, but the people are actually trading their hard-earned dollars for a product that I made, in a tasting room that we built. It feels pretty great.

After 4 years of brewing I decided to pick a line up of beers to work on improving, with the goal being taking a sip and saying that's it. For the last year I've only been brewing tweaked versions of these. I also try to do it with as few yeasts as possible. All groups go light, amber, dark. Pretty much all session beer because that's what I like

I just cannot imagine anyone purchasing that disgusting can.  Actually, I cannot imagine purchasing anything from that brewery now.  Not to mention they're a smokehouse as well...

At any rate my dream tap list...
I have an obsession with session  beers so I'd have to be careful not to push my preferences on the general public.  If money were no object, I'd love to feature regional beers from all over.  If I had to pick, say, 15...

1) Munich Dunkel - a favorite style
2) Hefeweizen - there is no substitute
3) German Pils - makes friends everywhere
4) Helles Export - classic and tasty
5) Marzen - I might even list it without the lil dots above the ä
6) English Bitter - rotate all 3 strengths
7) English Porter - I warned you about the session thing..
American Pale Ale - because 'Merica
9) IPA - mandatory to stay in business
10) Saison - bring some art to this mess
11) American Wild Ale - to round us out.  Not sour exclusive, funk will have a home here too
12) Sour tap - who doesn't appreciate a good sour?  Flanders, Gueuze, Berliner, etc. 
13) Belgian Tripel - because they're tasty and not everybody wants session beer. Rotate with other styles in category 
14) Scottish Ale - because they're tasty and I want session beer
15) Rotating heavy beer (barley wine, Imperial Stout, Imperial anything) - the big guns
