Huevos Rancheros

A new found love for me...  a hot and spicy hangover cure.  I went with scrambled eggs this time because the wife can't do sunny side up.

The sauce
A tomato
A medium yellow onion, julienned
Garlic clove
Beef or chicken stock
2 Arbol chilis dried
1 tsp cumin
1tbsp smoked paprika
1 tsp Ancho powder
2 tbsp butter
1 tbsp crema

Pico de Gallo
Tomato
Red onion
Serrano
Lemon juice or lime
Cilantro

Fresh brown eggs, pan fried
Fresh yellow corn tortillas, pan fried

Assembly,
Tort
Onion sauce
Pico
Eggs
Cilantro
More crema

Nice! That's a favorite dish of mine. It's great when you want something quick to throw together. I usually have mine over black beans with a toasted quesadilla. It's a staple "working dad dinner" in my household.

Nice! That's a favorite dish of mine. It's great when you want something quick to throw together. I usually have mine over black beans with a toasted quesadilla. It's a staple "working dad dinner" in my household.


Yep, my favorite breakfast. I love chorizo and refried beans with mine, with queso fresco cheese and my homemade hot sauce on top.

+1 Refried beans and rice would have hit the spot with some Cotija cheese.  Now I want to go make some more.

I have a love for chilaquiles, but not the vegetarian variety.  I use my carnitas recipe or go for shrimp. 

Chilaquiles, enchiladas, and flautas are regular dinners for me and the kids.  Surprise surprise, they love the flautas the most
