Wood and Beer Seminar with Peter Bouckaert
« on: March 13, 2017, 01:07:21 pm »
Brewers United for Real Potables (BURP) is happy to present a seminar on wood and beer with Peter Bouckaert, Brewmaster at New Belgium Brewing Company. The seminar will take place at Meridian Pint in DC on April 9.  Doors open at 6:30 PM and the seminar starts at 7:00 PM.  Afterwards Peter will sign books for those that are interested.  The cost to attend is $5.00.  BURP will be selling copies of Peter's latest book Wood and Beer: A Brewers Guide for the discounted price of $15.  However, if you register for the seminar and buy the book in advance your $5.00 entry fee will be applied to the book cost.  To register for the event go to: https://www.burp.org/events/#!event/2017/4/9/wood-beer.

Peter has been Brewmaster at New Belgium Brewing Company in Fort Collins, Colorado since 1996.  He started to love beer while growing up in Belgium and went on studying for brewing engineer at the University of Ghent, Belgium.  Zulte was the first brewery he worked in, one of the breweries of the group Kronenbourg at that time.  He went on and became brewmaster in Rodenbach for almost 10 years.  He also worked with Brewery De Gouden Boom and started his own brewpub, De Zwingel in Harelbeke in 1994.

In 2013, Peter received the Russell Schehrer Award for Innovation in Brewing. Peter's publications include A Process Approach Yeast Flocculation, Vitality and Viability, and “Metabolomic profiling of beer reveals effect of temperature on non-volatile small molecules during short-term storage”, among others.  His latest book is Wood & Beer, A Brewer's Guide which he co-authored with Dick Cantwell, co-founder and former head brewer of Elysian Brewing Company.

In Wood and Beer: A Brewers Guide, Bouckaert and Cantwell discuss the history, physiology, microbiology and flavor contributions of wood, influences of wood as a vehicle for contributing complexity to beers fermented and aged, and the maintenance of wooden vessels.  Peter will be discussing some of these topics that are of most interest to home brewers.
