Cites/Simcoe is a good one.  I had an IPA dry hopped with the combo at the Cigar City tasting room and liked it enough to try it myself.

I like variations of fruity with citrusy with piney or resiny

Galaxy/Cascade/Chinook
Amarillo/Willamette/Centennial
Galaxy/Citra/Chinook
Galaxy/Centennial/Chinook
Nelson/Amarillo/Chinook
Nelson/Amarillo/Columbus

I love those 8 hops and just like mixing & matching them.

For German beers, I favor Hallertaur.
For English, its Fuggles and Challenger

I'm a fan of mixing "German" and American hops.  Mt. Hood and Columbus.  Tettnang and Cascade.

I am in agreement with you 100%. I do a "hop lager" with Mandarina, tettnagner and Cascade and it is very tasty when fresh. My house IPA used to use French Strisselspalt (I know not German but...) and when I had na hard time finding that hop I felt that the beer suffered. I do use Crystal now in place of that, which I feel is almost German enough.

I've been gathering info from various sources. Here's what I have so far:

"Amarillo and Citra, are pretty much a match made in heaven. Simcoe mingles with them just as smooth. My favorite combo, period.

Cascade and Centennial are really nice together. Columbus obviously rolls with these 2 guys pretty well, too.

Nugget and Willamette are awesome together as well for darker beers that don't need a million ibus.


English Style Combo’s
* Fuggles, East Kent Goldings, Styrian Golding
* Fuggles, East Kent Goldings, Willamette
* East Kent, Fuggles, Willamette
* East Kent Goldings, Styrian Goldings
German Style Combo’s
* Any noble hop series is fine
American Style Combo’s
* Cascade, Chinook, Columbus
* Cascade, Centennial, Chinook
* Cascade, Magnum
* Galena, Centennial, Cascade
* Warrior, Amarillo, Simcoe
* Warrior, Simcoe, Amarillo
* Mt. Hood, Crystal

Doesn't Sierra Nevada Pale Ale do something like this? I seem to remember them using Perle hops at some point in time.
Corn is a fine adjunct in beer.

And don't buy stale beer.

Im thinking ill go with Columbus or Magnum for bittering, some Centennial and Columbus for a hop stand and dry hop with a mix of Centennial/Columbus and a 2nd dry hop of Citra/Amarillo.

Sounds awesome! FWIW, I'd go with the Columbus for bittering. Magnum is so smooth and clean it won't show up with all the other show stoppers that you have in the brew.

Another vote for Cluster. Gotta have it in CAP for bittering.

Agreed, Crystal gets used a lot here. I've not used it in my IPA, yet I guess.

I like Cluster as well. No problem using them for bittering. But I have learned to go easy with them for flavor-aroma additions or mix them with something else (for my tastes anyway).

They actually go really nice with a little Cascade for flavor-aroma additions in an Amber Lager I make. Im not talking Pale Ale amounts of Cascade, just light additions to bring the beer a little something.

Yes, that is what the SN page on Pale Ale says.

The white board at the brewery had a different hop combination. It was Bravo, Cascade, and the last was Cascade plus a little Centennial and one I can't remember. Someone posted a picture from their tour on here a couple years ago. My Google Fu is weak this morning as I can't find it.

They do say that the recipes can change due to variations in the raw materials.

For hoppy lagers I like a combo of 2 out of Motueka, Sterling and Mandarina Bavaria.

English ales get Challenger for bittering, and finished with EKG and sometimes either Centennial or Caliente if I want a little boost in hop flavor.

Hoppy American ales get 3-5 of the following depending on what flavor profile I'm looking for:
Citra (Mango, and a great "hop amplifier" when combined with other citrus/tropical hops because of the massive oil content)
Nelson Sauvin (grapefruit/muscat)
Caliente (Red Plum)
Meridian (Nectarine - hit or miss hop from batch-to-batch, sometimes loaded with flavor, sometimes flavorless)
Vic Secret (Passionfruit)
Motueka (Lime zest/Lemongrass)
Enigma (pine/orange)
Apollo (tangerine/dank - hit or miss from batch to batch like Meridian)

Those are my big ones. I'll mix and match depending on what flavors I want up front.

Cascade/Aramis/Aurora is one of my favorite combinations for saisons. Also works well for a hoppy lager.
