Plus, Bubbles add flavor and almost sweetness to everything. So when I do the champagne stage, it will make anything taste good. Especially with these Yeasts. I can't find any reviews for these Yeasts, but the WS strain is from a well known Winery in California, and they seem to have a bunch of specialty Yeast strains. So I am pretty sure this will turn out good. It's not like I am coming into this planning on getting Bread Yeast from the Grocery store and fermenting in a Milk bottle by poking a hole in the lid.
