There is a recent post.

I just made one recently.

1.25 gal water
4oz chopped ginger
8oz sugar
8oz equivalent stivia (mine was 20 packs
1/4 cup lime juice.
1/2 tsp ginger powder for a touch of heat.

Steep ginger and sweetner for an hour in half gallon. Strain into rest of water and lime juice.

A friend of mine had this recipe (modified from this one which he got on the Food Network website)...really tasty:

1 1/2 ounces finely grated fresh ginger
6 ounces sugar
7 1/2 cups water
1/8 teaspoon champagne yeast
2 tablespoons freshly squeezed lemon juice

He experimented with a variety of ginger types, and found that the plain-old stuff from the standard grocery store made the stuff most to our taste.

This link will take you to the recipe I ended up with based on trial and error, but the whole thread is a good read:

I force carbonate, so if you're using yeast to carbonate, you may need to bump the sugar amount up slightly.
