First IIPA recipe check/help
« on: August 04, 2017, 04:28:12 pm »
Hey guys, after 7 years of brewing, I'm thinking of brewing my first ever IIPA soon. Partly because I've never made one, partly because now that I can keg I don't worry about hop aroma going kaputs on me, and partly because I have hops to use up. Just wanting to get a second opinion on the hop combination to make sure I'm not crazy. Here it is:

Batch size: 3 gallons
OG: 1.080
FG: 1.016
ABV: 8.3%
IBU: 100

Fermentables:
8lb 12oz Halcyon (English pale malt)
13oz Vienna

Hops:
41g Apollo (16%) @ 30min
30g Nugget (13%) @ 10min
15g (0.53oz) Pacific Jade @ Flameout
15g Ariana @ Flameout
15g Jarrylo @ Flameout
15g Pacific Jade @ Keg hop
15g Ariana @ Keg hop
15g Jarrylo @ Keg hop

Yeast:
San Diego Super, big starter

Mash will be at 150F for 60 minutes.

I always use some sugar in my IIPA to help dry it out. For 3 gallons, half a pound should be fine.

^^^ Sugar is a must in IIPA, to avoid the cloying finish of some of the lesser examples. I use a lb in 5 gallons.

Also, OP you're way light on late hops. This is the beer to get a ton of late hop character. I'd double the keg amounts, as well as the flameout amounts, EXCEPT that I'd take the flameout additions and wait to add them until you've cooled the wort to 175F, then let them steep (stirring every few minutes) for 45 minutes. Just my $0.02  .

Edit for seeing the 3 gallon recipe.   :)

Exactly the kind of help I was looking for. Thanks you two, I'll update the recipe as suggested.

Definitely a hop combination for a unique IIPA. Jarrylo is an unusual hop. Lots of banana but in a banana candy way that a lot of people don't like. I've used it in combination with other hops and liked it enough to drink what I made but probably not a hop I plan on buying again.

Thanks! I've used Jarrylo in a hopped up black wheat before and I liked the way it worked there, hopefully it will do the same here.

+1 on boosting the late hops and also +1 on cutting the body by replacing some of the grist with table sugar.

IIPA needs to be light on the tongue, not heavy like a barleywine.
