Steaming works well with fresh eggs but it is not perfect. I still have problems with about a quarter of them the others peel really well. My eggs usually are less than a week from being laid. Boilingthe eggs, I need to save eggs to be at least three weeks old to get the same results. Ice water at the end is a must in either way you do your eggs.

Any of you guys do duck eggs?

Duck eggs are awesome. Also we can get farm fresh duck eggs from the Chinese grocery store.

Chicken eggs from the stores around here are not even close to fresh.

We are getting about 4 duck eggs a day now with our old girls. Those eggs kill when baking things.

You hooked me up mister.

Fresh from the nest eggs. Steamed 20 minutes.
Into ice and cold water plunge. 15 minute.

Results...A  cleanly and easily peeled hard egg.

Hardboiled 6 jumbo brown today. At least a week in my fridge. Pierced the fat ends and brought up to and boiled for 8 minutes. Rapidly chilled no cracking and easy to peel. Mmm quick snack and egg salad on crackers.

No worries, the ones sitting on the counter for near a week or those in the bottom of the fridge get turned into pickeld eggs/egg salad now  ;D

I love pickled eggs!  Do you do red beet or brown malt vinegar pickled eggs?
