cinnamon sticks vs. ground cinnamon
« on: September 01, 2017, 07:27:09 am »
Doing a spiced holiday strong ale. I normally use crappy ground cinnamon at the end of the boil. I have some saigon cinnamon sticks which smell amazing in comparison. I normally go with about about 1 tsp of ground cinnamon in addition to other spices at the end of the boil. Any recommendations on how many cinnamon sticks to use in place of ground cinnamon?

Normally one stick of ceylon cinnamon is 1/2 tsp. I would use a little less because saigon cinnamon has a bolder flavor.

Thank you. So you would recommend using a little less than the equivalent of 1/2 tsp (1 stick) or just less than the equivalent of what I would normally use for ceylon?

A little less than what you normally use of ceylon. Since you're adding spices to the boil you can always add, taste and add more before chilling if you need to.

Great. Thank you. Maybe 1-1/2 sticks at the end and more post fermentation if necessary.
