Green Apple Beer Recipes

Hey everyone, so I have a green apple tree in my backyard and I have wanted to make a beer with this for the last several years. It only produces usable fruit every 3 years, and this is the year.  I am trying to come up with a recipe that I can utilize these apples but don't want to do a cider.  I am thinking a lambic or sour but really open to anything.  Anyone do a pale ale or IPA? I am not sure I can get those right and if the flavors would really compliment each other, which is why I defaulted to a lambic/sour.

I had a similar situation a couple of years ago. I picked the apples before they were ripe (didn't realize they were going to turn red) and made a tart apple saison. Froze about 5 lbs of quartered apples and added once fermentation slowed. It was actually quite good.
On Tap/Bottled: IPL, Adjunct Vienna, Golden Stout, Honey Lager
Fermenting: IPA
Up Next: mexi lager, Germerican pale ale

I been wanting to try one myself putting the apples in a secondary sounds like a nice idea cause I don't want a cider either.  A nice apple spice porter sounds great for Christmas
