My name's Edoardo, I'm an Italian homebrwer.
First of all I would apologize for my bad English.
Anyway, I'm writting on the forum for ask your opinion about my first Apa.

I don't know if DME is as finicky as Liquid Extract, but there tends to be a lot of unfermentables left in LME.  I would add a little bit of simple sugar (0.25-0.5 kilo) like Dextrose (Corn Sugar) or table sugar. This will help you achieve that 1.011 FG.  The drier the beer, the crisper it will be and the hops will really pop. I use mostly liquid extract and I've had to add some sugar to lower my finals. It makes a huge difference!

Also, maybe a small amount of dark grain to add some color? 100% Extra light DME may end up being fairly light (1-2 SRM), an APA isn't dark, but a light golden or even reddish color would give it some character.

There are a couple of recent posts here that talked about attenuation and color with DME/LME.

I haven’t (yet) been able to find the post on color with DME.  What one of the posters noted is that DME darkens as OG rises - an OG around 20 has an SRM around 3, with an OG around 60, the SRM is 7.  This matches my experiences with DME (although late additions of DME will lighten the color some).  Some malter information sheets will have detailed information on SRM.

LME doesn't necessarily have more unfermentable than DME.  It depends entirely on how either is made.  With either, I'll replace 1/4-1/2 lb. of extract with table sugar.
