First batch of wine

I'm starting my first batch of wine in a 1 gallon. I noticed the fruit extract is .3 us gals would this be the same amount for every wine I made. For example if I wanted to make a Riesling would I get the appropriate extract measure out .03 and follow similar instructions.

Also what are good resources for first time wine makers.
