Is this overboard??? IPA hop schedule.

So I went through my freezer and found a ton of unopened pellets that are getting close to the end of being useful anymore. Well, I just so happen to be brewing an IPA this weekend and thought, “why not add all this to it so it doesn’t go to waste?”

This is what I came up with to make sure they all get used. Please let me know if any suggestions or ideas you may have!  I’d like it to stay a bit higher in IBUs with an interesting and different aroma and flavor spread.

60 minute boil

60 mins:
Chinook (2 oz.)
Apollo (1 oz.)

20mins:
Sorachi Ace (1 oz.)

10 mins:
Chinook (1 oz.)

1 mins:
Lemondrop (1 oz.)

Dry hop 5 days:
Chinook (1 oz.)
Lemondrop (1 oz.)

That has a bunch of bitting hops. I’m away from my software, but I would just use the Apollo at 60, move the Chinook to 0 or dry.

I'm a big Whirlpool doubter... But I feel like you'd be happier using most of those in dry hop and whirl pool. I'd shoot for 20-30 IBU at 30 or 60, and the rest really late. I've been doing this recently and it's incredible. Alternative? Ship them to me.

Okay, so I’ve revised my plan based on the responses so far. My only question is will the 1 oz: of Apollo at 60 mins make it nice and bitter?  I’d like to go for a nice bitter pacific feel.

60 mins:
Apollo (1 oz)

10 mins
Sorachi Ace (1 oz)

5 mins
Chinook (1 oz)

1 min
Lemondrop (1 oz)

Dry hop at 5 days
Chinook (2 oz)
Lemondrop (1 oz)

Let me know is this seems more in line.

The Sorachi Ace will overpower the other hops.  Maybe take SA down to just 0.5 oz.  However if you love SA as I do, the full ounce is good.

I agree with moving some of the Chinook from boil to dry hop, that's a good idea.

What if I up the chinook by an ounce at 5 mins to offset the effect of the sorachi?  Or maybe swap the chinook and sorachi flavor additions, making chinook at 10 mins and sorachi at 5?

Naw..... either reduce the amount of Sorachi, or don't.  I understand you are trying to use full packets, so if that is more important to you than beer flavor, then use the whole pack.

The maximum IBUs any beer can have is about 80-90.  I haven't run all the math but I believe it won't matter if you put more at 60 minutes because I think you already hit the max possible.

I guess it depends on what the AA content of your Apollo hops are and what you consider high bitterness. I could see throwing in an additional 1/2-1 oz of bittering hops if you want it very bitter...

Well, the Apollo I have is at an 18.5% AA, so they'll be pretty bitter.  I'd like to match the bitterness of a west coast style IPA, but don't want to go too over the top.  It will be me and a couple friends who like bitter IPA drinking it, but I don't want their heart to stop.  Lol.
