FWIW I poured a bottle of Sierra Nevada Pale Ale yesterday and there was zero head.

I've noticed quite a bit, both with SNPA and commercial beer in general, that if poured gently and at an angle there will sometimes be very little foam. 
It's too close to home
And it's too near the bone

Try a 10-15 minute protein rest at 122* F before bringing the temp up to 150.  This will help with the Wheat malt to develop the head you're looking for.  I'm pretty sure this should fix your problem.
