Weird Sahti/Ale experimental Frankenstein project

Any thoughts?

Going for high abv, malty, rye, and in your face juniper notes.

OG: 1.091
FG: 1.012

Wyeast 3333-PC

6 lbs. Rye LME
1 lb. Gold DME
1 lb. Mixed Grains (crystal blend steep)
5 lb. local wildflower Honey (flame out)

.5 oz. Juniper Berries (steep)
.5 oz. Columbus (60 mins)
.5 oz. Juniper Berries (10 mins)
1 oz. Kent Goldings (10 mins)
1 oz. Juniper Berries (Dryhop 3-5 days mascerated with raw sugar)

If that Rye LME is Briess, be aware that it has pale malt and 20% crystal in it already.

Good thing to know. Maybe I’ll double down and steep a chocolate rye blend instead.
