Even minor agitation causes CO2 breakout. The CO2 bubbles in turn scrub out a lot of the aromatics into the headspace. This is one way that brewers can reduce, for example, excessive sulfur in a lager: they bubble CO2 into the tank from near the bottom to scrub the sulfur into the headspace, which can then be vented from the tank. Without agitation, you may lose some aromatics to a big headspace, but I don't know if the loss would be perceivable. Agitation is the (much) more important variable here.
