I like to keep it simple.  8)  What the Old Doppelbock needs to blend with is something more hop forward than a bland pale lager.

Looks good! I'm going to try and max everything out before summer when it'll be too hot to brew. Brewing happens anyway in the summer but I should've started back in November when brewing season starts.

i'm actually a less summer brewer due to busy schedules and travel then. this is my prime time.

so since I mash higher now at around 5.5ish, absolutely critical for this style IMO. finished product for pils in the 4.6ish range significantly enhances the crisp quenching finish.

Thanks for the info. So do you drop to 5.1 for all your pale lagers or just pils out of curiosity? I was thinking by doing 5.25 kettle for the helles that it should be fairly crisp but (by comparison) not as much as North German pils. At least it'll give me a yard stick to gauge by.

You know, you're just over an hour drive north for me. Maybe one of these days we can swap some beers or even team up for a brew day.... One of these weeks that have an extra day in them. Time has not been on my side lately lol
