I'm sold on the long Hochkurz mash rests as well and Carahell. And I plan to brew mostly lagers this year as well, focusing on Helles and Pilsner.

Great looking beer, Jon.

Crusher and crisp and dry at 1.006FG. Your recipe makes a good platform to flip different base malts in. The extra added ounce (3 total) flaked barley helps and still dropped clear with 1:2 tsp gelatin. Might up it to 4oz next one. Thinking using Vienna as base on next.

Ken, how much kolsch malt is that, out of curiosity?  I'm feeling like the color of the kolsch malt isn't quite as dark as the L rating would lead you to think.

You didn't find it to be overly "bready" at 90%?

Bready sounds perfect for me. Nice looking beer, Ken. Did you add acid to the boil for this one as well or since it's an ale did you not bother with that...? I wonder if acidifying the boil is standard practice in German breweries...or if it's only for helles and pilsner.

And, sadly, Euge's photos aren't showing up for me.
