The condensation on the glass reappears faster than I can wipe it off and pick up the camera, but this is the APA I have on tap right now: 85% 2-row, 8.5% C-15, 6.5% white wheat malt.

My new cream ale!

5.2% ABV, 18 IBU

Whole flower hopped with German Tradition

WLP080 cream ale blend (love this yeast!)

Grist comprised of 2-row and 6-row, flaked corn, touch of light crystal and acid malt for pH.

Brewed just over 3 weeks ago today... End result is just awesome, probably near the top of best cream ale's I've had... Loving the slight grassy notes from the hops. Super delicious.

My new spunded low O2 AIPA at a month. The haze is all Galaxy and Citra goodness, and plenty of it. Damn, this is a good beer. Disclaimer - all IMO. The carbonation and overall impression is soft like the other beers I've done in this fashion, even though I used a lb of hops. The balance is there with the soft character, fruity hop character and the IMO improved character of the crystal with the technique. I honestly think the combo of keg hopping with spunding to scavenge the O2 (and upstream O2 control as well) is the magic bullet for me. Crazy good.

Thanks, really good hop character. It's pretty vivid.  Probably not telling you anything. Impressed with the drinkability, even in an agressively hopped beer.


Edit -  Awesome looking beer. I'm on to helles and export next.

It's an amazing thing. Once the oxidized grain bitterness is gone ( which you don't know is there, until it's gone!) it makes the beer so smooth. I have another theory about spunding with yeast under pressure that helps with this as well. It's like drinking beer flavored water. That sounds bad but it's exactly the opposite. The smoothness is un paralleled.

I've purposely tried this on malty lager, then balanced, but hoppy ale, and then on silly hopped IPA (the other extreme). I agree. IMO, FWIW, etc. Gotta see helles and export now.
