I always tend to see this thread at lunch on a Friday - it sure makes it seem like a longer afternoon when I do - can't wait to get home now after work....

A young Saison - brewed 7/2. 
90% Pilsner malt
7% Flaked wheat
3% Acidulated malt
8 oz D-90 Candi syrup
1/2 oz magnum (first wort)
Wyeast 3711 French Saison
OG: 1.058
FG: 1.003
Calculated 7.2% ABV

Refining my Pale Ale. Same grains, hops and water as last batch. Tried a few diffrent things.
Lower Mash pH
Dry hopped at high krausen instead of in the keg.
Fermented at higher temp. Brought finished pH down.

Next time I will try finings in the keg.

For the hops I was wanting some mild spicy and earthy from the Saaz, mixed with aroma and flavor of the fruity / flowery Amarillo. The liquid cocoa is a bit spendy, but it goes a long way and is extremely easy to use. It's already sterile, so you can just add straight to secondary.

Zythos, Oats, German & English Pale Malt, C40 and Cararye.

The foam is great, a bit hazy though (even without all that condensation on it)

Risk of failure should be no deterrent to trying.

Hoppy Blonde Ale.

This was my first LO batch. Came out well even with 55ppm SMB.

This is also the batch I had which the malt was chewy (moist from sitting in humid garage for a month).  I don't notice any negative effects. Maybe the malt wasn't moist long enough to have a noticeable impact.
