Oktoberfest has officially started here.  My keg of Vienna Lager went down so a keg of festbier has taken its place.  This is by far the best Oktoberfest Lager I have ever made.  65% Swaen Pils, 35% Avangard dark munich, 28 IBU of Magnum for 30 minutes and the Omega Bayern / Augustiner yeast.  This will now be my permanent recipe for this style.  Outstanding.  Time for dancing steins of foamy festbier.  :D

Amber ale with Mt. Hood, Willamette, Crystal and Glacier in the last 15 minutes and then dry hopped with more Mt. Hood and Northern Brewer. 



Looks great! I have to get going again- been 5 month hiatus!

More Oktoberfest Lager...





These were the beers I was meant to brew and drink.  I'm stunned by how great this simple recipe came out.  Two grains.  One hop variety added just one time.  Great yeast and suitable water.

Tasty IPA. This is my first use of Azacca and my first IPA in a few years. Azacca definitely has lots of flavors. I taste mostly orange and mango, but, there are other flavors also.

1064 OG, 2.5 gallons
97% Two-row Pale
3% Caramel 40
60 IBU Simcoe @ 60
1 oz Azacca @ 1 (3 IBU)
3 oz Azacca steep
3 oz Azacca dry hop
MJ M44 US West Coast Ale

Lower oxygen De Koninck clone. Had to add some external CO2 as I miscalculated the time to start spunding. Still, the foam is much better than the original.

Raspberry mead. Very tasty. 7 # home picked raspberries in a 3 gallon batch. Nice raspberry punch with honey accents.
I stayed home today to make cider and cyser from apples we pressed this weekend and decided to bottle this while I was at it. Avoided posting on the bad thread
