Lower oxygen De Koninck clone. Had to add some external CO2 as I miscalculated the time to start spunding. Still, the foam is much better than the original.

Yeah!  The foam stand does look healthy on that one. Nice job!

As a wise philosopher from ancient Greece once said, lodo brewing is 10 percent adding weird chemicals and putting funny mash caps, and 90 percent best practices.

Good looking beer.

I'm good with the best practices. It's the weird chemicals I can't get past.

There are also bestest practices, and then you don't need any chemicals anymore. Just some weird s*** voodoo. Which I don't master.

Jon, I really like it. I bought some last year and it made the best Munich Dunkel that I've ever made. The left over went into my Barley Wine and that beer got a second in the first round of NHC. I recently bought a 55 lb bag and next on the list is a Dopplebock.

Bloatarian Club IPA Hop Experiment.
Everyone had basically the same grain bill:
10 lb Pale malt
.5 lb Crystal 40
.4 lb Carapils
Mash @ 153°

Hops:
.8 oz Galena for bittering (everyone used Galena)
Varietal hop (mine was Apollo):
1 oz at 10 min
1.5 oz at knockout, whirlpool for 10 min
1.5 oz dry hop

US05 yeast, fermented 65-68°

26 kegs of IPA @ the meeting, some were late so there may have been more by the end!  Got to taste a bunch of different hops, including many that I've never had and/or would have been unlikely to pick up.  As for Apollo, I'd probably keep this one for a bittering charge only.  If used late I'd definitely pair it with another hop or two.  I'm tempted to drop an American oak spiral into this keg.  For science.
